I know astrology has a long history influenced by several cultures, but does anyone know of a book or website that details the main influences of how the planets came to represent what they do?

Yeah, planetary symbolism can come from mythology starting from the babylonian days and others. Jungian astrologers do publish a lot on it e.g., on Saturn, Pluto, Uranus, Neptune (outer planets) as they have more significance on a global level. Liz Greene, Jeff Green, Donna Cunningham are just few who like to examine planetary symbolism in depth, incl. history. There's info everywhere lol you have to go looking for it.
