The part in bold shows that the STS entities can't accept coexistence, not resist coexistence. In other words, they can't be near garlic.
The garlic won't absorb negative energy until it's peeled and left open. So eating a fresh clove of garlic wouldn't be eating negative energy; on the contrary, it would help protect the body against negative energy, in the form of parasites or STS nasties. (And vampires! Let's not forget vampires!)
Onions work similarly and in fact are used in herbal medicine to guard against the plague: simply leave a cut onion or garlic open near the bed of the sick person and it will absorb the sickness. (So they say.) I don't question that it works, but I do question how it works. I don't think it absorbs negativity; I suspect it just repels it somehow, and whatever quality was in the garlic/onion is now gone, so it's useless, spent. But I'm not sure about that part.
My understanding that if the diet is heavy with animal products, or if there is any kind of contagious illness such as a virus, then garlic, onions and other spices are very important, to purify the body from the toxins from the dead animals, so that it is less hospitable to the virus. But those advocating a more sattvic diet say that spicy foods can be too stimulating (whatever that means).
My conclusion is: The heavier the diet, the more spicy foods are needed. The lighter the diet, the less spicy foods are needed. But I disagree that they should ever be avoided, because even with a sattvic diet, there are so many toxins in the environment (not to mention STS nasties!) that I think adding that extra protection is a good idea. I don't ever plan to quit eating onions or garlic on account of some dietary protocol.
My understanding is that the reason the garlic should be destroyed after it's done its job, is that some element or energetic property has been taken from it.
