Maslow's Heirarchy of Needs fits the stats on why people respond differently to eating less meat: poorer people would have more concerns about individual health (fear of getting what they need to survive), and wealthier people who have what they need to survive would be free to consider the larger implications. But this is very general, and refers to people who react more than they create.

There is also the fact that media is huge now. The internet, endless cable TV stations, satellite radio, all contribute to a hugely expanded information base. There is no hiding from reality (loosely termed) with such media. The public is becoming aware of the realities of eating meat, and once aware, the knowledge, or controversy, does not go away.
