I am familiar that the logo of windmills relates to the phrase "tilting at windmills", and that somehow that relates to the L/L Research team.

What does this phrase mean? I recall reading something about it before in one of the L/L Research books, but can't recall where, and don't remember what it means.

That clears up the source. But what does "tilting at windmills" mean? Is it a metaphor for something? Like a metaphor for enjoying the Quixote artwork? Or something else?

Literally, "tilting at windmills" is what Don Quixote did...tilting in this context being related to jousting. In the novel, Don Quixote attacked windmills which he thought to be giants.

The phrase is used idiomatically to express the idea of attacking an imaginary enemy.
