Recently I've been making a 50% potato and 50% white bean mash in the food processor with chopped chives and a little bit of oil. Then I have a side of sauteed mushrooms, spinach and tomatoes with steamed brocolli. I love this simple and balanced meal, and have it very often!
After having a pretty painful run-in with zinc deficiency myself (basically one that was slightly present as a vegetarian that got worse over 4 years of non-healthy vegan eating. Non-healthy as in potato chips and stuff and not watching nutrients/bloodwork, and only watching calories/weight), I can readily attest to beans were a great source of zinc and other nutrients. Mind you, I was taking a multivitamin that had these nutrients throughout - but in minute quantities.
