Gosh, I thought those words had very clear meanings. If the person knows that the animals suffer, and knows that eating meat is unnecessary, but does it anyway.

Well, 'convoluted' means complicated/twisted/confusing/intricate/nuanced, whereas 'black and white' means simple/straightforward/lacking nuance. They have opposite meanings.
