I'm doing what I can on my end. I raised dent corn this year, instead of sweet corn, as an experiment. We raised a local heirloom variety called Kentucky Butcher, because of its dark red color.

We searched for someone who could grind it for us, to no avail (it's amazing that there are no small millers anymore.....that in itself is worrying); but someone told us that we could grind it in a Vita-Mix, so we bought one. It works! So now, we can produce our own corn meal, in addition to vegetables.
