I am with you, Seren88. All of my life I have felt a strong compassion for plants and animals so much so that I was termed "very sensitive." When I was little, I'd cry easily if a tree were cut down, for instance. I laugh when I think of my parents figuring out how to live with me. They hung in there with their very sensitive child.
Fast forward to now, I try to relocate as many insects and critters as I can. However, we have really bad fire ants here. And you don't see them, and they are all over you stinging in seconds. They can be fierce here. They swarmed and attacked me and others one too many times. I could not walk out into my yard - and neither could my dogs or guests - without being viciously attacked.
I have yet to find a way to peacefully co-exist with fire ants.
I like flofrog's ideas of deterrents for the snails and slugs. Can you wear gloves and hand-pick them off of your plants, and relocate them to another area of your garden where they can live out their little lives and do their thing? I seem to remember copper is a deterrent to snails and slugs???
